What started with a love for the food we grew up with became a food truck built to share authentic Mexican flavor across Colorado.
Chill in a Box is rooted in the flavors and traditions of Mexico and inspired by our family’s experience in the restaurant business.
When we brought that passion to Colorado, we wanted to create something different—Mexican food that felt familiar, exciting and memorable.
We started with one of Mexico’s most beloved dishes: chilaquiles. They quickly became our signature and the beginning of something much bigger.
